Bananabread Granola Recipe

  • 290 g oats not shredded
  • 100 g buckwheat
  • 80 g walnuts
  • 40 g sunflower seeds
  • 2 tsp cinnamon
  • 1 pinch of salt
  • 1 banana
  • 60 ml coconut oil (melted)
  • 70 ml honey
  • 1 tsp vanilla

  • 2 bananas
  • 200 g yogurt of choice
  • 2 tsp chia seeds
  • 100 g blueberries


  • Preheat oven to 165°C.
  • Combine oat flakes, buckwheat, walnuts, sunflower seeds, salt and cinnamon in a bowl and mix. Now mash the banana with a fork until creamy. Combine the mashed banana, honey, vanilla and melted coconut oil with the oatmeal/nut mixture by using a kitchen spatula. You can melt the coconut oil either in a water bath, in a heat-resistant container in the oven or in the microwave. Sometimes I also heat the honey because it is best mixed in a completely liquid state.
  • Spread the raw granola mixture on a baking tray lined with baking paper. Lightly press the mixture down with a spatula (about 1 cm thick). Bake the granola for 20 minutes. Half time, turn the granola so that the homemade muesli is baked evenly.
  • Allow to cool completely on the baking tray. Cover with a tea towel. 
    Important: Do not break into pieces until the granola has cooled down completely. The mixture is soft immediately after the oven and only hardens during the cooling process. Just be patient, because you can break the granola into chunks when it has cooled down.
  • Now serve the banana granola with yogurt, chia seeds, berries and banana slices.
