Crunchy Granola Cups

Equipment

Zutaten

  • 160 g homemade granola
  • 30 g almond butter
  • 2 EL coconut oil liquid
  • 1 EL maple syrup
  • 1 pinch of salt

Schoko-Füllung

  • 90 g chocolate 60% cacao
  • 40 g honey
  • 120 g avocado pitted & peeled
  • 120 g sweet potato peeled & cooked
  • 1,5 EL cacao powder

Topping

  • 1 banana

Anleitungen

  • Put the granola in a bowl. Use a wooden spoon and divide the larger granola chunks into smaller pieces. Mix well with almond butter, liquid coconut oil, maple syrup and salt. Now press the mixture into the muffin silicon molds. Use the back of a teaspoon to make a dent in the middle of each cup. Place the filled silicone mold in the freezer meanwhile.
  • For the chocolate filling, first melt the chocolate in the microwave or a water bath. Cook the sweet potato, peel it and cut it into small pieces. In a food processor mix together with the avocado until creamy. Now mix in the liquid chocolate. Add honey and cocoa powder.
  • Now fill the granola cups with the creamy chocolate layer. Refrigerate for about 2 hours in the fridge to give the chocolate cream a mousse-like consistency. Then remove cups from the molds and serve with fresh banana slices.
    If you don't have time to make your own granola, you can of course buy granola from the grocery store. It is also important to crush the granola chunks into pieces so that the cups can be shaped later.
